Savory Apple-Pear Compote

INGREDIENTS
1 tablespoon olive oil
1/4 cup onion, in 1/2-inch dice
1/2 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
1 tablespoon horseradish, freshly grated (optional)
1 teaspoon fresh thyme, rosemary, or oregano, chopped
1 tablespoon honey
2 tablespoons white wine vinegar
2 cups apple and/or pear; peeled and cut into 1-inch dice
1 teaspoon chives, chopped (optional for garnish)

PREPARATION

  • Heat olive oil in a medium-sized saucepan.
  • Add onion, salt, and pepper, and sauté over medium heat until soft, about 3 minutes.
  • Add garlic and horseradish (if using), and sauté for one additional minute.
  • Add herbs, honey, vinegar, and fruit, and bring to a boil.
  • Reduce heat, and simmer until fruit is just tender, about 5–8 minutes.
  • Pour into serving bowl and sprinkle with chives, if using.

Makes 1 1/2–2 cups. Prep time, 15 minutes; cook time, 10–12 minutes.

Cook’s note: This compote is great with potato latkes or served with cheese, chicken, or pork.
